This multi sensorial performance where sound and culinary art converse surges as a critic to the neoliberal model imposed in the 1970s under the violent and calamitous regime of Augusto Pinochet. These economic and environmental policies played a big role in the appalling extinction of neoliberal model edible fish and crustaceans in the coastal city of Valparaíso. Christian revealed this deplorable situation by cooking a menu based on Vidriola, a fish that was previously available in Valparaíso waters but now needs to be imported. He deliberately used ingredients purchased in a supermarket that is part of a major multinational chain, which is another consequence of this model that has affected the local economy. Christian usually shops in El Cardonal food market which I visited and recorded. Also in the concert I sampled fragments from an interview with Pier Paolo Pasolini, who is a very influential figure for Christian. The possibility to present a critical political statement using the symbolic means of food also showed me many potential aspects of working with food that have been unexplored in my work.
